Abstract
Owing to the development of new methods that exploit nuclear magnetic resonance (NMR), it has become possible to determine exchange rates of protons that hop between amino acids and water. This paper describes how these novel methods result from a long history, and how the authors have been able to push the limits in terms of exchange rates by nearly two orders of magnitude, up to 105 events per second.
